I appear to have hurt grub's feelings

Going through initial setup on this little box. Things going well, upon a reboot I hit the ESC key a few times to attempt to get into the BIOS menu to set the box to boot on power-on. First time I got a blank purple screen with a grub prompt, as I recall. But just that: "grub>". Powered the box down (probably a mistake), and brought it back up. ESC got me into the BIOS menu and I made my setting change. But now the little beast just cycles: power off, power up, the message "Sytem BootOrder not found. Initializing defaults. Creating boot entry "Boot0004" with label "ubuntu" for file "\EFI\ubuntu\shimx64.efi". This blips by so fast on the screen as to be unreadable...I had to video it to see what it said. Box immediately powers off, powers back up, and this message comes up right after the MINIX splash screen.

Unsure how to proceed. It'd have been nice if the tiny startup guide mentioned how to get into the BIOS. Now I know that. Do multiple presses get you into the grub "shell"? Is there something I can do to glue the boot process back together there?
 
Have gotten past this, and now, box boots up to a blank, purple screen. ESC here gets me a grub menu. I have apparently sinned by letting Ubuntu update the platform. 4.15.0-76 fails to boot. 4.15.0-76 recovery boots. 4.15.0-29 boots normally. I'm guessing this is due to video driver issues? I have read elsewhere I should be installing from an ISO instead of updating. It was my hope to run OpenVPN, Mosquitto, some other stuff on this box...things that require configuration. Things I'd hate to redo with any frequency.
