I want to switch to OpenDNS but these general method: https://support.opendns.com/hc/en-u...ndroid-Configuration-instructions-for-OpenDNS does not seem to work. Is there a workaround?

I assume you have been through Settings/Network & Internet/IP Settings/Static and entered everything correctly so could you advise further what you mean by "does not seem to work"?
A workaround would be to install Blokada and set the DNS through there:
