Edit: on re-boot, the SSD has now renamed itself to E/ rather than D/
I've just used Macrium Reflect to clone from eMMC (32GB) to SSD (240GB)One way would be to clone the eMMC installation to the SSD.

The only step I missed was to make sure one of the partitions is enlarged to fill the unused space.
So I did it again, this time enlarging the relevant partition!
There are 4 partitions.
Partition 3 needs enlarging before dragging in partition 4.
Select Partition 3 and select Cloned Partition Properties.
Enter 752MB (the size of partition 4) in to the Free Space box.
Now drag in partition 4.
The cloning takes around 10 minutes.
After cloning.
I restarted the device and entered BIOS.
Disabled the eMMC (It may not be necessary?!)
Selected SSD as 1st Boot Option.
Saved and exited.
Device booted to SSD.
I restarted again.
Entered BIOS and enabled the eMMC.
Checked Boot Option to make sure SSD was still 1st.
Device booted to SSD.
SSD is C/ and eMMC is D/
Used MiniTool Partition Wizard to remove all partitions of the eMMC.
Created a Simple Volume on eMMC.
